  • 2 ripe bananas
  • 60 g date paste
  • 100 g oat flour
  • 50 g pure cocoa
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon yeast or baking powder
  • Nuts to taste: walnuts, hazelnuts, almonds...

PREPARATION: Preheat the oven to 180ºC. Mash the bananas and mix them with the date paste, eggs, and vanilla. Beat and add the oat flour, pure cocoa, and baking powder, integrating everything well. Pour the mixture into a mold, add the nuts, and bake for approximately 25 minutes.


Avocado toast and hard-boiled egg

INGREDIENTS

  • 2 slices of whole wheat spelled bread
  • 1/2 avocado
  • 2 eggs
  • sesame seeds
  • Salt
  • Pepper

PREPARATION: Boil the egg for 5 or 6 minutes to get a creamy yolk. Toast the bread in the toaster or air fryer for a few minutes. Spread the avocado, chop the egg and add some sesame seeds on top. You can season with salt and pepper to taste.


Healthy pancakes

INGREDIENTS

  • 2 eggs
  • 50 g chickpea flour
  • 15 g date paste
  • Extra virgin olive oil
  • Chocolate 85%
  • Hazelnuts
  • Orange

PREPARATION: Mix the chickpea flour, eggs and date paste until you get a homogeneous texture. Put a little extra virgin olive oil in a frying pan, over medium heat. Add a little batter and when bubbles appear, turn the pancake over. Repeat the process. As toppings, you can add a little melted 85% chocolate, hazelnuts and fresh orange.

Avocado toast with feta and cherry and homemade blueberry and avocado jam

INGREDIENTS:

  • 1 slice of whole wheat spelled bread
  • 1/4 avocado
  • feta cheese
  • cherry tomato

PREPARATION: Toast the whole wheat bread in the toaster or air fryer for a few minutes. Spread the avocado, add chopped cherry tomatoes and crumbled feta cheese. 

For the second toast…

INGREDIENTS:

  • 1 cup of blueberries
  • 2 tablespoons chia seeds
  • 1 slice of whole wheat spelled bread
  • 1/4 avocado
  • 10 g pistachios

PREPARATION: to make the homemade blueberry jam, wash the blueberries, add the chia and microwave everything for 5 minutes, in a suitable, covered container. Blend lightly until you get a jam texture. Subsequently, toast the whole wheat bread in the toaster or air fryer for a few minutes. Spread the bread with the jam, add the sliced ​​avocado and add some pistachios on top.
